La tour Bajole dresse la robuste carrure de ses trois étages en plein cœur du vieux Couches.

Dès le XIIème siècle, cette construction se trouvait sous la dépendance et le confortable voisinage du puissant prieuré Saint-Georges. Sans doute, fut-elle successivement une installation militaire de défense, puis la demeure d’un haut et riche dignitaire. Cependant son histoire est mal connue pourquoi cette appellation de Tour ? et de Bajol ?

De vieux écrits mentionnent l’existence d’une tour accolée à la maison. Elle devait occuper l’emplacement de l’escalier extérieur plus récent. Le mur qui le domine, porteur de quelques motifs sculptés et d’ouvertures, en est sans doute un vestige.

Quant à l’appellation insolite de Bajol, elle a donné lieu à deux explications très différentes. Pour certains, Bajol vient de Baylus qui désignait un officier de justice. Il est possible que les moines du prieuré, ayant obtenu la protection du roi, aient installé son envoyé dans cette demeure dont ils étaient propriétaires en plein cœur de Couches en royauté.

Mais pour d’autres, Bajol viendrait de Bezola, nom d’un ventier du prieuré auquel la maison avait été cédée. Longtemps la maison s’est appelée la tour aux ventiers, tandis que la rue Saint-Georges était la rue des Ventiers. Le ventier était un employé du prieuré d’un rang important puisqu’il avait pour charge de collecter les impôts.

La fonction était héréditaire et une dynastie de Bezola a pu se succéder dans la maison en lui donnant son nom. Mais dans le passé, elle s’est aussi appelée «Saint-Louis», «Sarrotte» et «Lanot». Elégamment restaurée, la Tour Bajole abrite actuellement un restaurant gastronomique.

Nice place to go! In the middle of de Bourgogne. Typical french. Looks like an old castle (in and outside) Food is 'heavy' and ok, but was a bit less of taste. The plates are simple. Very friendly host. Speaks English. What did I like the most? The room. Very old and a nice atmosphere. Most annoying? The staff was not very attent. It took ages before our empty plates were collected. (2 times) To sum up: okay night, okay food, but 'I have had better..'

We, 3 Australian couples on holiday in France, had a lovely lunch here in August 2022. The menu was good, the food startlingly good, and quite well-priced. We were given extra little treats too. As early as the 12th century, this building was dependent on the powerful priory of Saint George. The expression "Bajole" comes either from Bayulus, which referred to a royal justice officer, or from Bezola, the name of a ventier of the priory, an important tax collector.
