The guests who toured the Mars Global Research and Development Hub were sent home with an assortment of Mars Wrigley treats, including a pouch of Skittles only sold in China and Snickers bars in special packaging paying tribute to the company’s home city.

On January 18, Mars held a ribbon-cutting ceremony at its newest, and largest to date Global Research and Development Hub. Located in the city’s Goose Island area, the facility will host development of product and packaging innovation involving the company’s popular candy and snack brands, including Snickers, M&M’s, Twix, and others.

As Snack Food & Wholesale Bakery  chief editor, I was among the fortunate group of media members, local officials, area historians, and other visitors invited to attend a ribbon-cutting ceremony marking the official opening of the hub. The 44,000-square-foot facility includes a bar line, roasted nut kitchen, test kitchen, panning equipment, printing area, flexible pilot line, and even a store where visitors can procure candy and branded souvenirs.

Understandably, not all of the state-of-the-art facility’s features were on view or can be shared with SF&WB  readers. However, there was still a lot to see on our tour—for just a selection of the hub’s sights, scroll through the photos on this gallery.

Chicago to become Mars Wrigley’s largest innovation hub in the world

Mars Wrigley broke ground on a new, best-in-class, global research and development hub adjacent to the company’s existing Global Innovation Center on Goose Island.

Leaders from Mars as well as key Chicago stakeholders, including Michael Fassnacht , CEO, World Business Chicago, and Alderman Walter Burnett Jr. , gathered together to commemorate the milestone for the company.

This multimillion-dollar investment will make Chicago home to the company’s largest innovation hub in the world, creating a best-in-class workplace that will position Mars Wrigley to drive category-leading innovations for the company’s iconic global snacks and treats brands such as M&M’S, SNICKERS, TWIX, and more. The new facility will incorporate a test kitchen for developing new products, state-of-the-art pilot lines, and an area for breakthrough technology development.

At the event,  Chris Rowe , Global Vice President of Research and Development, Mars Wrigley, spoke to a crowd of more than 100 attendees about how the new hub reinforces Mars’ continued commitment to Chicago. “Mars has a long history here in Chicago, and we’re proud to continue our legacy of innovation in the Chicagoland area by breaking ground on our best-in-class global research and development hub for Mars Wrigley,” Rowe said. “As a leader in snacking and treating, we look forward to Chicago being the center of exciting, consumer-driven innovations that span the globe.”

“On behalf of Mayor Lightfoot and Chicago’sbusiness community, we congratulate Mars on today’s groundbreaking of its innovation center,” said  Michael Fassnacht , President and CEO of World Business Chicago, and Chief Marketing Officer, City of Chicago. “Chicago’s food innovation ecosystem is one of the fastest growing in the U.S. with record investments and innovation. We are grateful to Mars for its longstanding commitment to the Chicago community, and excited to see Mars help drive Chicago’s resonance for food innovation throughout the world.”

“Mars has been a respected part of the Goose Island community for the past 17 years,” said Chicago Alderman  Walter Burnett, Jr . “I am thrilled to see Mars deepen its commitment to Goose Island with the groundbreaking of this new facility.”

The investment will bring about thirty additional jobs to the Mars Wrigley Global Innovation Center, with jobs on the Mars Goose Island campus nearing 1,000. The project is slated to be complete by summer 2023.

Mars Wrigley, the Chicago-based maker of Snickers and other famous confections, debuted its new research and development hub.

The 44,000-square-foot Global Innovation Center on Goose Island serves as ground zero for the company's global research and innovation.

At the $42 million snacking research and development hub, the sweets maker will test out new flavors and looks while focusing on "sustainable" ingredients in what it calls its future-focused mission. At the new site, the company's R&D team tests whether new creations can be made on a large scale in the centralized location.

With sustainability at its forefront, the facility is powered by 100% renewable energy that is fossil fuel-free, according to Mars. The center offers the research team more space to experiment with new flavors with rooms dedicated exclusively to the development of M&M centers, which are most famously filled with milk chocolate and peanuts.

"​​It's just a lot more resources and pans and having everything under one roof really makes it a lot more efficient. So it's a huge thing because, in the last room, we only had two pans, two of these pans to coat with chocolate. Now we have up to like 13," one scientist said of the M&M coating process during a tour of the facility.

In its testing kitchen, researchers get hands-on with nougat, caramel and chocolate to test new recipes. Considering itself to be an agricultural business — as it is one of the top five buyers of edible peanuts in the world — the new center includes roasted and raw nut rooms, where the science and tech team experiments with various nuts to produce new products.

Through its "bar belt," a conveyor belt that duplicates factory conditions, Mars works on perfecting the process of bringing the sweets to scale.

"​​This is much larger than actually any other pilot project that we have globally. Between having all the capability to do the small stuff, and all the handmade stuff all the way to the line, it's got quite a bit more capability than any of our other facilities do," said Matthew Kradenpoth, senior principal scientist at Mars.

Mars began construction for the expansion of its Goose Island operations in 2022. The site employs roughly 600 people, with the new hub adding another 30 jobs. The innovation hub adds to the high growth in food tech and food industry production in Chicago. According to a report by World Business Chicago, Chicago's food industry came in at No. 1 for gross domestic product and absolute growth in 2022, while Illinois innovates slightly above the national average.
