Terms and Conditions

  • Tour will be conducted in English only.
  • Tour participants have to be between 8 to 70 years old, and do not have any physical, medical or other condition which may make it unsafe for you to participate in the tour.
  • Tour participants need to be in non-slip closed-toe shoes and appropriate attire during the tour for safety, as the kitchen floor can be slippery. Participants who are not in proper footwear will be refused from the Tour.
  • Tour participants will need to put on a disposable hair net for food safety, during the entire duration in the kitchen. Hair nets will be provided.
  • Tour participants are to carry their personal belongings with them throughout the tour. Please bring along a small bag (if you need), as the kitchen space might be tight in some areas.
  • Tour participants have to accept instructions and directions which may be given by the KFC Restaurant Staff, including in relation to complying with the Rules of Conduct that will be shared before the Tour.
  • Not punctual for the Tour
  • Not in the mental or physical condition to safely participate in the Tour, or
  • Not wearing proper footwear, or
  • Not following the Rules of Conduct before and during the Tour or
  • For any other reason.
  • Strictly no photo / video taking is allowed in the kitchen
  • During the Tour, Tour participants are responsible for their own safety and enter KFC’s facilities at their own risks. There are 345 restaurants in more than 80 cities across India. KFC’s lip smacking taste is the taste you can trust. They allow general public to walk into their kitchens anytime and to have a look at how their favourite fried chicken is marinated with the most authentic spices, hand-breaded and freshly prepared with a lot of love.

The hygiene is another factor which we should consider and the staff washes and sanitizes their hands every 30 Min’s. They use only RO water for cooking and this is one of the most important thing which goes behind the running of a successful food chain.

Another impressive thing is the veg and non-veg segregation of food. They have separate cooking counters for veg and non-veg food and they follow stringent standards to ensure that the food is cooked separately. Not just the oil and ingredients, but even the utensils and the staff cooking the dish are separate. So now the vegetarians need not worry about chicken in their food. KFC respects the sentiments of vegetarians.

After a tour of the kitchen, we ordered food. We ordered Choco Divine and Alphonso Burst Krushers. The Choco Divine tasted heavenly. The chocolate that they add to this is not any chocolate but they add special cocoa beans which they source from Ghana. The Alphonso Mango Burst had real chunks of only the freshest, juiciest, ripest Alphonso mangoes to give it a taste like none other.

We also ordered a KFC Zinger. Popcorn Chicken, rice bowl with chicken and fiery grilled chicken. I just loved biting into the burger with juicy chicken in it. The spices used for their chicken are selected from the spice capital of the world- Kerala to make sure that the chicken has the right zing into it. KFC sources it’s chicken locally from Venky’s, Godrej and Suguna and they get 100% real unprocessed chicken which are farm bred. The chickens are not mutated neither treated with hormones.

The Popcorn chicken is a great hit among the kids. Popcorn Chicken is made from whole pieces of boneless chicken that are cut down into bite size chunks.

The veg items that we ordered were also good. The best was the crispy potato hash, I just loved biting into these. All the vegetables used by KFC are absolutely fresh and not frozen or preserved.

Not just the food, but even the packaging is from sustainable sources. They use FSC (Forest Stewardship Council) certified board.

KFC Open Kitchen Tour: The Best KFC Experience Ever!

KFC launched its open kitchen guided tours about a month ago, and I FINALLY got to experience it today! 😀 The tour at KFC Waterway Point today was hosted by Restaurant Manager, Ms Pauline Lim. Just as I’d expected, I learnt SO MUCH about KFC that I didn’t know, and what I did not expect was that they would serve us the chicken which we had watched being prepared – from getting breaded to being cooked! The chicken was mindblowingly good! It was steaming hot, super succulent and there is no way it can taste any better (even if you try cooking it at home yourself). We weren’t given chicken which had been precooked. So, like the experience we had at Bee Cheng Hiang Grillery , it ranks as the best. And *sniff sniff* they even gave us a personalized card each. WLE! They want to make us cry, is it?!

There were 8 of us who signed up for today’s tour at 3pm. The slots get fully booked really fast so make sure you stalk their website for newly released dates!

We were served a drink of PEPSI while we awaited the start of the tour. Only ONE person showed up late – I hope he feels paiseh that so many of us were waiting for him. But interestingly he was wearing a black tshirt with the words ‘ earlybird ‘ printed on it. OMG. Irony much? (@_@) Anyway, back to Pauline. While she looks youthful, she has been working at KFC for 26 years(!) , climbing up the ranks to her current position of Restaurant Manager. She shared a bit about the background of how KFC came to be – Colonel Sanders succeeded only at age 65 after failing as an insurance agent among other careers, and even had his petrol station burnt down at one point. How suay is that?

KFC has been in Singapore for some 42 years! The first outlet was at Somerset. And the local outlets serve over 1 million customers every month! And today, Pauline went all out to show us exactly how much hard work is involved in keeping KFC restaurants up and running and delighting customers.

We were NOT allowed to take pictures or videos of the kitchen – imagine my disappointment. I wish it was made known on the website for the kitchen tour. However, I did manage to take down some notes as Pauline spoke. 🙂

We were issued hair nets, which we wore without any fuss. Then we trooped into the kitchen where we watched as a young man from China, Wangjun, breaded the chicken parts and placed them neatly in a cage-like contraption, before putting it into the oil and shutting the lid of the pressure cooker. For the Original recipe, the chicken is pressure cooked while the Crispy ones are cooked in the regular ‘open’ concept. The latter also requires double-breading for that crispy skin and marination with chili.

*And in case you have ever wondered… KFC uses FRESH chicken , not frozen ones.

I like how they use technology to their advantage. Everything is timed and the heat is regulated. Once the chicken is in, the staff are free to go do other tasks.

And because I’m SO CURIOUS about the oil, I asked how often they change it. The answer I got (but don’t quote me since I didn’t do any recording) was, supposedly, that the oil is filtered thrice a day and changed every 7 days . Seems a little long to me, considering how this is a “high volume” outlet. But so far, I believe, there have been no complaints about oil quality?

One other thing I learnt is that there is a hold time of 1 hour for the chicken. Once the chicken is cooked, they have 1 hour to sell it before they have to throw it out. So perhaps… I may have ordered chicken that has been sitting around for 45 minutes or more at some point in the past? No wonder it’s cooled down already and not so yummy lah .

The kitchen tour “Insider pass” costs $15 per pax . You get the tour, plus a 2-piece chicken meal, with drink and TWO sides. There’s also a tote bag with a $5 voucher (for use online) with a minimum purchase of $20, and a ‘chicken drumstick’ pen. 😀

And one other thing which amazed me was when I asked about how many locals they hire, and Pauline’s answer was that 80% are foreigners . WOW. And since Pauline is local, and has worked at KFC for 26 years, I asked her why she stayed for so long. And apparently it’s due to the people whom she says are fun to work with. And along the way, she has picked up many tips on how to survive this fast-paced work environment with long working hours. If you’re considering joining KFC, I think you’d be glad to have a manager like her as she has loads to share.

And if you ask me, what has changed after this tour is that I don’t think I can order chicken at KFC anymore. I know it’ll never beat the taste I experienced today right after the tour. If I’m ever craving for KFC chicken again, I’ll sign up for the tour a second time and enjoy the best chicken after. There’s really nothing else like it. (*So I’m not too sure if the company made the right decision in offering the tour. Muahaha)

Kfc kitchen tours – my experience and what i feel about kfc food.

If you follow me on Instagram, you would have seen some of my KFC kitchen tours pictures last week. I am usually not a fast food person, I detest McD, I don’t like Pizza Hut and Dominos Pizza. But if there is one fast food brand that I enjoy eating now and it’s KFC. Go ahead and judge me, if you want, but the crispy chicken and chicken popcorn is somewhat comfort food for me.

So when the company contacted me sometime ago for the kitchen tour, I got curious and said why not? Let’s understand what happens behind the doors, what goes into the making of KFC kitchen? Usually we equate fast food with not so clean kitchens but the first thing that strikes you when you enter the kitchen is the fact that how clean it is. We started the tour with a demo of how they wash their arms and hands before they start working every time in the kitchen, water at 35-40C , anti bacterial soup, drying followed by a santizing. The method seemed pretty solid to me.

The second thing that strikes you is the fact that how well the segregation of  vegetarian and non-veg food has been done. Different kitchen sections with separate grills, fryers and even separate apron colors for people working with meat vs vegetarian food. Contamination is highly unlikely. Oh and BTW, I love their potato crisper burger, I know the burger purist in me which not call that a burger but heck it’s yummy.

We also saw the process of breading the famous crispy chicken at KFC, and it was like we all were suddenly transported to a candy shop. The process was totally unexpected and fun. They take the marinated chicken and throw it into a huge bowl of seasoned dry flour crumb mixture. The person does a fold kind of action of 7 times and then picks out the chicken with the help of a sieve and washes it. Yes you read it right it, wash off the flour and then repeat the process of dipping it in flour all over again. This is what leads to the flakiness of the crispy chicken. Makes sense when you think of it, I am gonna surely try this at home soon.

And while we are at chicken, they showed us how the chicken is stored and processed. Stored between 1-4C, marinated and vacuum sealed with strict timestamps, the process gave me comfort and confidence.

KFC kitchen tours had me smiling and more confindent to walk into KFC with my son than before and they are open to general public. So next time you are at KFC, talk to the manager and ask for a kitchen tour. You will be suitably impressed, I assure you.

I Ate the World’s Best Kentucky Fried Chicken at KFC Headquarters

I am a lover of all things fast food , but one of my favorite aspects is the innovation behind each item. When you pick up some weirdo new burger at a chain restaurant , dripping with whatever new sauce they’ve just released, you’re biting into an idea that was thought up by actual human beings.

This innovation is exactly why I've always wanted to visit a fast-food test kitchen. So when the Kentucky Fried Chicken team slid into my inbox and asked if I’d like to visit their test kitchen and headquarters in Louisville, Kentucky, it was an enthusiastic yes on my end. It was time to see how the chicken-sausage gets made.

Where Is KFC's Headquarters?

Kentucky Fried Chicken is headquartered in Louisville, Kentucky. It was founded in 1930 — not too far away from Louisville in a town called Corbin — when Colonel Harland Sanders (did you know his first name was Harland?) bought a roadside motel and started frying up chicken. 

The first franchised KFC opened in Salt Lake City, Utah, in 1952, and the rest is history.

What Are the 11 Herbs and Spices?

Every single person I talked to that works for KFC told me that, yes, there really is a secret recipe for KFC's fried chicken . Every one of those people also allege that the recipe is on a handwritten note, inside a safe, inside a vault, somewhere in the building. I assume it’s also guarded by that big, three-headed dog from “Harry Potter” and a room full of flying, poisonous darts, but nobody would confirm that.

According to Food Innovation Technologist Mike Showalter, the breading for the chicken arrives pre-mixed in a package. Showalter is the guy in charge of the chicken-frying standards at KFC. Royalty, really. Apparently, the package that employees receive at the restaurant is actually the result of two different deliveries, where two suppliers arrive with each half of the ingredients and combine them, creating the mixture the restaurants use. 

I was trying really hard to not think about “Breaking Bad” while listening to all of this. It didn’t help at all that Showalter, when asked if he knew the secret recipe, simply put his hands up and said, “No, and I honestly don’t want to.”

When Did Colonel Sanders Die?

Colonel Sanders died in 1980 and isn’t nearly as old as all the black and white photos make it seem.

He really was a colonel, too, for a brief time. Add to that list: a steamboat operator, lawyer, and a ton of other things before he found his calling in chicken wings . People went nuts for his wings. He’s probably the original celebrity chef, to be honest. 

For me, none of these facts were nearly as exciting as the reveal of his first name. I mean, Harland?!

Is there a Colonel Sanders Museum at the Headquarters?

Why, yes there is. The first jump scare of my day came when an animatronic Colonel Sanders came to life and started telling me his life story. Inside the museum you can discover things like his actual suit, desk, and some other fun pieces of KFC history. If only he could have been alive to see the chicken sandwich wars.

What Happens at the KFC Test Kitchen?

My day at the Yum! Foods corporate office (the group also owns Taco Bell and Pizza Hut) started with a chat with KFC’s Chief Marketing Officer, Nick Chavez. He told us about KFC’s goals as a brand, the differences between Original Recipe and Extra Crispy (it’s the batter), and a few upcoming menu items I’m not at liberty to discuss. 

You better believe there’s a full replica of a KFC restaurant right there in the building for any employee with a sudden 4 p.m. mashed potato craving (or any other KFC sides , for that matter). It’s even got a drive-thru for office workers on the go, because apparently employees ride tricycles around the office? I didn’t see that happen, but I was told it’s common. It was at that point that I considered that this whole thing might be a big prank.

Next, we got to taste some of those special-up-and-coming menu additions while we met the innovation team. Claire Brandenburg, a Food Innovation Manager and the genius behind KFC's Secret Recipe Fries, has the coolest job I’ve ever heard of, I think. 

A good amount of her time is spent right there in the kitchen itself, playing around, working out flavors, and innovating. When she and her team think they have a hit on their hands, they present it to leadership. They also (and here is where my jaw nearly hit the floor in jealousy) are sent on frequent “inspirational” trips to culinary-forward cities, dining at the best restaurants that city has to offer. These trips are used as inspiration to spark creativity back in the test kitchen.

If you hear of a job that sounds more awesome than that, you let me know.

After a demonstration and explanation about KFC’s frying process, we got to give it a shot ourselves. I will not tell you how bad I was at it. That is my little secret.

We fried up some crispy chicken nuggets , played around with different wrap combinations, and tasted some sauces going through R&D. Then it was finally time to bid goodbye to the test kitchen. KFC chicken, eaten straight out of the fryer, is pretty unreal. This has got to be the best KFC on the planet. They even made me a custom bucket with my big, ugly mug on it. Happy nightmares!

There were so many things I had on my mind after experiencing the amount of work behind the innovation of fast food. But the truth is, even with so much to think about, my mind really kept going back to one thing. When the kitchen team began their presentation, I was really half-listening. 

The reason? This was my first time trying the new KFC Hot and Spicy wings, which came out in September and are available for a limited time in the U.S. I was too busy unironically licking every morsel of seasoning off my fingers; they are that good. I did all 10 fingers before I realized what was happening.

You got me, Harland. Mission accomplished.

With consumers increasingly becoming more inquisitive about the food they eat, and more concerned over the way their food is prepared, KFC hopes that this step of open sharing with their guests will put minds at ease.

“To complement our guests’ curiosity about our brand and how their food is being made, we want to come forward and share our secrets and behind-the-scenes practices, so that our guests can learn all about our famous finger lickin’ good chicken” says Lynette Lee, General Manager, KFC Singapore.

“As the leading chicken fast food brand, we want to encourage our guests to watch our cooks and hopefully learn new interesting facts about how their KFC meals are prepared fresh every day. We want to assure our guests that each piece of KFC chicken is crafted with passion and care and we use fresh chicken and quality ingredients,” she adds.

The   Tank @ KFC Tampines Mall  is located at Level 1, and has a seating capacity of 85. It is the first KFC outlet in South-East Asia to feature a glass panel, offering an open view straight into the KFC kitchen.

“’The Tank @ KFC Tampines Mall’ is the first KFC restaurant in Singapore where the preparation of our chicken can be watched live. Through this, we wish to demonstrate Colonel Sanders’ passion and obsession in making great-tasting chicken that our cooks, till this very day, still follow diligently,” Ms Lee explains.

“KFC OPEN KITCHEN” PROGRAMME

KFC Singapore will be officially kicking off its “ KFC Open Kitchen ” programme this April, where guests are brought into the highly guarded kitchens, allowing them to become a #KFCInsider.

The “KFC Open Kitchen” programme will bring participants on a culinary journey, starting from the kitchen’s storage area, the breading and preparation stations, and to the final service counter area where food is served. As a #KFCInsider, participants will be guided around by KFC restaurant managers to observe and be educated on how each piece of KFC chicken is freshly hand-breaded and cooked, and how burgers are freshly cooked and assembled. There will also be opportunities for guests to get ‘up close and personal’ with the KFC cooks.

“The launch of the ‘KFC Open Kitchen’ programme allows our eager guests to find answers to their questions about how KFC kitchens operate in a safe and clean environment, or to learn some of our secret practices, and in turn share their discoveries as a bona fide #KFCInsider,” Ms Lee elaborates.

The “KFC Open Kitchen” programme will be available for online booking from 8 April 2019 and there will be total of 36 tour sessions available monthly across selected KFC outlets that include KFC Kallang, Waterway Point, Toa Payoh Lorong 6, Jurong Point and Northpoint City. Each #KFCInsider pass will be priced at $15 per head for a 35-minute guided tour. Each pass also comes complete with a two-piece KFC chicken meal and a KFC goodie bag.

THE BIG REVEAL OF A KEY SECRET

One particular #KFCInsider secret to be revealed is the preparation of its signature Original Recipe chicken; how each piece of chicken is painstakingly breaded and fried to timed perfection in custom-made pressure-cookers. Adhering strictly to KFC’s founder, Colonel Sanders’, unique “ 7-10-7” breading technique, all Original Recipe chickens are hand-breaded in an exact sequence with its secret recipe of 11 herbs and spices. This is exactly how KFC chicken is freshly prepared in-store every day, the Colonel’s way.

Colonel Sander’s “7-10-7” unique breading technique:

Chicken pieces are ‘rolled’ 7 times in a basket after being cleaned and rinsed, to remove any excess moisture.

The chicken pieces are tossed in the breading flour 10 times, using a ‘scoop and lift’ motion.

Then, it is pressed into the breading flour 7 times, to ensure the ideal flour-to-chicken coating ratio on each piece.

Each piece of chicken is then placed onto layers of stainless steel clamshell baskets in a planned layout before being pressure-cooked to golden perfection. The precise “racking” layout was a special design by Colonel Sander himself, after countless attempt, for frying a perfectly cooked KFC chicken. This special layout is to ensure no overlapping of chicken pieces and allow different parts of the chicken, such as breast meat and a drumstick, to be cooked evenly at the same time, retaining its juiciness.

The result is a perfectly succulent piece of Original Recipe chicken made with love, craft and science, as well as that unmistakable finger lickin’ good taste which is consistent across all KFC restaurants.

ABOUT COLONEL SANDERS

Before KFC, Harland Sanders was a proud owner of a restaurant called ‘Sanders’ Court and Café’, located across the street from a busy highway gas station in Kentucky, USA. During that time, he served home-cooked food to truck drivers and vacationers on road trips. The food was so good that his restaurant became a destination instead of a pit stop. My Day in the KFC Test Kitchen

It takes a lot of fried chicken experimentation to develop a new menu item..

I was in the Colonel Sanders Museum tucked inside KFC’s headquarters in Louisville, Kentucky, with a small crew of other journalists. All of us had been invited to bourbon country so we could check out KFC’s corporate kitchen for ourselves; there we would see how some of the products were made, check out upcoming menu items, and hear about the process of developing new dishes.

But the trip didn’t just involve eating fried chicken until our arteries popped. We also had the chance to each design a culinary concoction of our own so that we could fully appreciate everything that goes into a fast food release. After passing through the museum under the Colonel’s watchful eye, that’s exactly what we did.

How new KFC products are developed

The KFC test kitchen is squirreled away inside the corporate office building, complete with a dining room, point of sale system, signage, and all the standard equipment installed in units across the country. Essentially, it’s a replica KFC restaurant right inside KFC HQ, and it’s where all the development takes place.

KFC head chef Christopher Scott showed us around the kitchen, explaining the process involved in breading the chicken, dropping it into the oil, and frying it off.

Having a good idea for a menu item is one thing, but there are lots of other factors to consider: ingredient sourcing, marketing strategies, and more. Most importantly, kitchen viability has to be taken into account. Is the new item streamlined enough that it can be assembled quickly, no matter how many orders are pouring in? Will assembling this item make a KFC employee’s job more difficult?

Experimenting in KFC’s test kitchen

I won’t lie—it’s fun playing around with ingredients, especially in a fast food kitchen. When I was a pizzamaker, coming up with ideas for specials was one of my favorite parts of the job. I’d often play with layers of flavor, various textures, and even the temperature of certain components before deciding whether to add a dish to the menu.

As a chef, Scott understands the power of various sauces and condiments, and he brings all sorts of ingredients into the test kitchen. On my visit, he had a version of Korean ssamjang on hand that he’d put together; I wasn’t expecting to see a dipping sauce typically made of fermented soybean paste (doenjang), fermented red pepper paste (gochujang), garlic, onion, sesame seeds, and sesame oil being put to use at a thoroughly American fried chicken chain.

He also had other store-bought items to play with, like a garlic crunch (similar to chili crisp ) and bottled Mambo sauce (a popular condiment in Washington D.C. that I’d liken to sweet and sour sauce). KFC’s standard sides and ingredients were also in play: coleslaw, mac and cheese, lettuce, tomato, onion, you name it.

My play sandwich started with a generous amount of Mambo sauce spread on the bottom bun. Then I added raw red onions, pickles, the KFC chicken filet, a dose of ssamjang, and coleslaw.

The resulting bites were sweet, savory, and full of different types of crunch from the pickles, chicken breading, and coleslaw; there was also a nice temperature contrast from the hot and cold ingredients. It was a rewarding process, and somewhat surreal, since most of the ingredients signaled to me that I was eating a real KFC product. But at KFC’s size, building a single successful chicken sandwich is almost meaningless unless you can scale it up.

How a new KFC item eventually makes it to the menu

I’d made a sandwich that was perfectly suited my personal tastes, but I realized something like this would be a hard sell to the general population, since you’d have to explain to customers what ssamjang is—indeed, KFC confirmed that consumers prefer descriptive product names that are easy to understand without additional context. Then I wondered if my assembly was viable at all, since a lot of its components aren’t typical to a KFC kitchen and it’s not ideal to stock all those additional ingredients for a single menu item.

I asked Diane Miller, the Director of Innovation for KFC’s U.S. division, some questions about how new items are conceived and eventually brought to restaurants. Theoretically, would it be possible to serve my original concoction nationwide?

“Whenever we serve a product with multiple ingredients, we train team members extensively on proper build technique and portioning, so we are delivering a consistent product to our customers every time,” Miller said. “Sometimes we introduce tools that help portioning. For example, for our current KFC Spicy Slaw Wrap, we brought in a tool to portion just the right amount of coleslaw. We’ve also recently switched to an advanced saucing dispenser that helps consistently distribute the same amount of sauce on our sandwiches.”

If a new ingredient is going to be introduced, Miller explained that it must be carefully chosen. It has to be something that KFC’s suppliers can reliably deliver, and it can’t cost too much per unit, and it can’t be too fussy to work with. (You can see why it’s preferable to innovate using whatever’s already on hand, as fellow Yum Brands company Taco Bell seems to do .)

If all the ingredients are determined to be easy enough to stock and assemble, things would still take time to reach actual customers. Miller noted that a typical timeline is one to two years from conception to debut, although KFC has, she says, “launched a new product nationally in as little as six to eight months.”

And of course, we know that some really original creations have resulted from this process.

“ The Double Down is our most distinctive,” Miller says. “ The KFC Cheetos Sandwich and KFC Pickle Fried Chicken also come to mind as really breakthrough and different.”

Next, there’s the test market to contend with. Right now, KFC is testing two new sandwiches in Tampa, Florida: the Ultimate KFC BBQ Chicken Sandwich (cheese, lots of barbecue sauce, crispy fried onions, bacon, and pickles) and the Spicy Slaw Chicken Sandwich (topped with a surprisingly spicy mayo, coleslaw, and pickles).

I was able to taste both of these sandwiches in the KFC test kitchen. Both are good, depending on your mood, but I much preferred the Spicy Slaw, mostly because I love spicy food and KFC’s coleslaw is already one of my preferred fast food sides .

So, will we ever see the Dennis Special at KFC? Probably not, but it’s not impossible. If it did go through all the necessary streamlining, testing, and scaling, it would likely emerge from that drive-thru window looking a lot different from what was originally conceived, down to its very name. But each new menu item has to come from somewhere, right?
