Tour Overview

Our guests will park at the bottom of Puia road, in the old plantation village of Paukaa. From there, our tour van will drive everyone up the hill to our beautiful estate at the Honolii Orchards – a family owned multigenerational farm. The drive up the hill is brief but scenic, through old macadamia nut groves and cattle pastures, and you’ll learn some of the history of the area from your driver. Upon arrival, you’ll be greeted by your guide who will be your steward for the rest of your experience.

Manoa Chocolate Tour: Introductions & Learning

Manoa’s factory is located in the small town of Kailua, about 30 minutes away from Honolulu. The parking lot is metered but only accepts coins. However, you can park on the side roads. If you’re lucky, you might be able to snag a spot right by the Kailua Library for free.

Upon checking in, a Manoa employee will greet you and your group and walk you through the chocolate-making process. Then they give you samples of all of their different types of chocolate.

Our guide, Kellen, was so sweet and engaging while sharing her knowledge about Manoa’s history. 

History of Manoa Chocolate 

Manoa Chocolate was started in 2012 by Dylan Butterbaugh, who was born and raised in Hawaii his whole life. As he was graduating from the University of Hawaii with a degree in Sustainable Development, his classmate experimented with cultivating cacao on the islands. Dylan was fascinated and saw the need for bean-to-bar chocolate with only the best cacao. He went all in with Manoa Chocolate, from planting the trees to sourcing beans all around Hawaii and other parts of the world, to investing in machinery to shell, harvest, roast, and morph the cacao into a high-quality bar.

Dylan learned everything he could about the chocolate-making process through YouTube (when there weren’t as many resources at the time). He used a tricycle and a back massager to create a makeshift winnower, a machine that separates the bean’s shells from the cacao nibs inside. The shells are then used to make chocolate tea (which Manoa also sells!). He used a barbeque to roast the beans. This was all before he invested in the manufacturing equipment needed to grow Manoa as a business and pioneer Hawaii’s craft chocolate industry.

During the tour, we learned that Hawaii is the only U.S. state with the climate to cultivate cacao, and the coldest location in the world to do so. 

Locations that sit on the equator are best for growing cacao. Hawaii just so happens to sit 20 degrees above the equator. 

Craft chocolate vs. commercial chocolate

There is a clear difference between craft chocolate and commercial chocolate. The latter is what we all know as chocolate from Hershey, KitKat, and the other brands you see in grocery stores and gas stations. They are all about the bottom line, using low-quality ingredients to make chocolate in the largest amount of batches with minimal human involvement. Their goal is to produce as much as possible, even at the expense of laborers.

Manoa Chocolate falls under the former. They source their beans directly from farmers in Hawaii and other parts of the world (such as Central and South America, and Tanzania) at high prices. This supports the farmers financially. Manoa also aims to use planting cacao trees as a way to reforest the islands, which benefits Hawaii and its people, creatures, and economy.

Lastly, Manoa Chocolate’s main mission is to make the highest quality, most delicious chocolate possible!

Why the name manoa ?

Manoa is Oahu’s lush valley filled with sugarcane and coffee plantations. It is 3 miles east of Downtown Honolulu and less than a mile from the Waikiki area. It is home to the University of Hawaii at Manoa , the flagship campus of the UH system. Despite this, Manoa Chocolate is located in the Kailua neighborhood, 30 minutes east of Honolulu.

The term manoa means solid, vast, deep . It also stands for taking care of the land that cultivates the cacao. With how much heart and soul Dylan put into Manoa Chocolate, it just makes sense. Especially with how they take ethical and sustainable practices seriously.

Learning about the bean-to-bar process

During the first part of the tour, Kellen points to a gallery wall of framed photos of the bean, starting off as a flower from the Theobroma Cacao tree to getting harvested and roasted. She shares how the cacao pods grow from the tree trunks and is home to the beans inside. There are an average of 20–40 beans in each pod. The beans are surrounded by white pulp, which is used to make cacao water.

Kellen had us try samples of cacao water, which had a fruity taste with tiny notes of chocolatiness (not sweet like a full-on chocolate bar, if you know what I mean). It was refreshing on a muggy day in Hawaii and has so many antioxidants and electrolytes to keep you healthy and hydrated.

We also sampled cocoa nibs fresh from the shell’s bean, by cracking them like peanuts (or manually winnowing them with our fingers).

Eventually, we got to observe the chocolate-making process through the windows. After roasting the beans, they go through winnowing , separating the nibs from the shell. After that, they go through refining and grinding , which they are made into a paste and when sugar gets added to the mix. Then they go through tempering , which heats and then cools the chocolate to the perfect temperature for the best consistency. Finally, the chocolate is ready for the molding process, which removes air bubbles and transforms it into a solid bar.

Manoa Chocolate Tour: Tasting all the bars

Now comes the fun part—tasting all of Manoa’s bars!

We were given the packaging of all of Manoa’s bars on the table along with a tasting wheel labeled with different flavor notes. Kellen served us chocolate tea to cleanse our palate between tasting each sample.

Manoa has three chocolate bar collections:

  • Hawaiian Grown Cacao Collection: Made with beans grown from different parts of Oahu (Mililani, Ko’olaupoko, Waiahole, Waimanalo) and Big Island (Kona and Kealakekua). There are also three bars in this collection that have added flavor in each, such as lavender, goat milk, and regular milk to make it less dark and more Belgium/Swiss style.
  • Alcohol collection: There are two bars in this collection, one of which is infused with KōHana Rum, and the other with Old Pali Road Whiskey.
  • Flavors of Hawaii: Chocolates infused with and inspired by Hawaiian fare. Flavors include mango, banana, haupia coconut, sea salt, coffee, and liliko’i (passionfruit). The packaging is colorful, fun, and illustrated by Punky Aloha Studio .

Analyzing the flavors

As we were tasting each piece of chocolate, we had to guess which notes were inside. We all agreed that most of the Hawaiian Grown Cacao bars had fruity notes. It turns out that the Waimalano bar had hints of green apple while Kealakekua bar had a bit of strawberry. The Mililani bar had cherry, passionfruit, AND raspberry.

My favorite bar was the one with goat milk because it had that savory bite that almost tasted like a creamy cheesecake. Cecilio loved the lavender bar; he said that he could actually taste the lavender, unlike in other products that claim to have it but end up being too mild. The lavenders were sourced from Ali’i Kula Lavender Farm in Maui.

I especially loved the rum bar. But the whiskey bar? I could take it or leave it.

As far as the Flavors of Hawaii collection, I had a hard time deciding…but I would have to say that I loved the mango and coffee bars.

Kellen had one more treat for us: she had two white chocolate bars from their tea collection (which is no longer sold online, it’s in-store only). They were chai latte and matcha flavored, and were sold as tiny squares in plastic wrap. I loved both, especially the chai latte bar as it tasted autumnal!

How YOU can try Manoa Chocolate

If you decide to visit the Oahu island in Hawaii, you’ve got to take a day trip to Kailua to do the Manoa Chocolate Tour & Tasting. You have to make reservations in advance , and the tours are operated everyday at 2 pm. They are about 60–90 minutes long.

You can also visit Manoa Chocolate as a part of a guided tour. GetYourGuide has two tours below which include a trip to Manoa.

Not heading out to Hawaii anytime soon? Don’t worry! You can purchase the chocolates on their website individually or as a set. They also sell chocolate-powdered macadamia nuts, chocolate tea, drinking cocoa, and macadamia spread (think Nutella, but with macadamia nuts instead of hazelnuts).

Manoa also offers a $35 monthly subscription box, consisting of three bars. It may be worth looking into, especially if you like surprises 🙂

Hidden Gems of Oahu: A Hawaii Cacao Farm Tour

I’m going to let you in on a travel secret, one of the best hidden gems of Oahu: visiting an operational Oahu chocolate farm, 21 Degrees Estate.

I did promise to mix up our literary travel talk with bits of chocolate and tea, so here we go. For those in the US, today is National Chocolate Day, and although every day feels like National Chocolate Day in my house, I still think it’s something worth celebrating.

In addition to literary tourism, I’m also a fan of chocolate tourism. I love to scope out chocolate factories, tours, shops, and experiences anywhere I go. Until recently, I’d seen just about every step in the chocolate-making process except the growing and processing of the cacao itself.

So, I remedied this a couple of weeks ago with a beautiful and informative two-hour tour of a local Hawaii cacao farm, 21 Degrees Estate, located on the windward side of Oahu in Kaneohe. And while I fancied I knew a lot about chocolate before I came, I still managed to learn a ton.

This Oahu chocolate farm tour in Kaneohe is one of my top recommendations for hidden gems of O’ahu that are off the beaten tourist track. As someone who lived in Hawaii, I can tell you that this is a really unique and worthwhile experience to prioritize for your Oahu itinerary.

About 21 Degrees Estate: Oahu chocolate farm

First of all, why the name 21 Degrees? Cacao is best grown in the regions 20 degrees north and south of the equator. It’s abundantly grown in Western Africa, which produces about 70% of the world’s chocolate. Ecuador, Indonesia, and Brazil also grow substantial amounts, primarily sold to big chocolate companies like Mars, Nestle, and Ferrero (if you want to learn more about the worker conditions and human rights issues in the “big chocolate” supply chain, check out this excellent article from the LA Times ).

The islands of Hawai’i lie approximately at the 21-degree north latitude, technically just outside the 20-degree mark, but farmers here still manage to grow cacao, and delicious cacao at that. Its location makes it the only state in the US that can do so. Still, land in Hawaii isn’t cheap, so cacao growers here typically operate small farms that contribute a relatively minuscule amount of cacao globally.

But what Hawaii cacao growers lack in quantity, they certainly make up for in quality, specializing in high-quality bars that are locally manufactured.

If you’ve never tried a single-origin chocolate bar (most chocolate bars are made from mixing cacao sourced from all over to maintain a relatively consistent flavor), you might not realize how different chocolate tastes depending not only on what state or country it’s grown in, not only the specific farm it’s grown on but even on the time of year and climate conditions of the specific farm it’s grown on. That was something I truly came to appreciate on this tour.

You’ll find more chocolate farms on the Big Island of Hawaii than on O’ahu, mostly because it’s a larger island with more available real estate for farming. In fact, 21 Degrees Estate is the only Oahu chocolate farm that offers tours currently, earning its place among the hidden gems of Oahu.

Taking the Only Oahu Chocolate Farm Tour

The 21 Degrees Estate tour first took us on a guided walkthrough of the cacao grove. I’d never realized the variety of cacao trees and how many different colors the pods can be, from yellow to green to red to deep purple.

The tour guides explained how the pods need to be picked at exactly the right time, and if you pick too early or too late, you’re out of luck. Split open, you can see that the inside is filled with the seeds (which will become chocolate) surrounded by a white, sticky pulp. Eaten raw, the outer pulp is quite sweet, while the hard, purple bean is very bitter and earthy-tasting (plenty of people on the tour decided to spit this out after giving it a taste).

The cacao beans have to undergo a process of fermentation and drying before they start to take on that delicious chocolate taste. After weeks of fermentation and drying, the cacao is ready to go to a chocolate maker, who roasts and processes the beans into what you’d recognize at the store: chocolate bars, chocolate chips, and the like.

Our tour of the 21 Degrees Estate concluded with what we’d all been waiting for… the chocolate tasting! Guided by one of the farm owners, who’s also a Chocolate Sommelier (yes, that’s a thing!) we tasted seven different chocolate bars all made from the cacao grown on their farm. The difference in textures, mouth feel, and flavor between different seasons of cacao harvests was remarkable (and delicious)!

Of course, I couldn’t leave this Oahu chocolate farm tour without raiding the gift shop to buy some of my favorite bars in larger quantities.

Tips for visiting the Oahu chocolate farm

First of all, check out my list of surprising things to know before visiting Hawaii and read up on these books set in Hawaii so you’re prepared for your trip.

Once you’ve read that over, you’re ready to visit this hidden gem on Oahu .

2-hour tours, including a chocolate tasting, are available every Tuesday at 2 p.m. and Saturday at 10:30 a.m. Tours fill up fast, so try to book at least two weeks in advance.

Tours and tastings cost $45 per adult, $20 for 13-18 year-olds, $10 for ages 6-12, and free for 5 and under (military and kama’aina discounts available).

I recommend bringing sunscreen and/or a hat, bug spray, and water (if the heat doesn’t get you thirsty, the chocolate will!). The gift shop accepts cash or credit cards.

The tour is kid-friendly. Kids are able to pet and feed the farm’s goats, visit the chickens and bees, and wander around the farm a bit (though they are not supposed to touch the cacao trees!).

In addition to tours, the Estate hosts special events throughout the year, including goat yoga and farm-to-table dinners. If you’re local, you can also sign up to volunteer on cacao harvest days.

The sad truth of the chocolate industry is that it’s rife with human rights issues, including child labor and the impoverishment of farmers. If you can’t make it to Hawaii in the near future but just want to taste some delicious chocolate grown and manufactured ethically from bean to bar, you can shop at Manoa Chocolate Factory ‘s online store. They partner with Hawaii growers (and some growers in other countries) to produce delicious, ethical chocolate.

Love chocolate? Then take a break from exploring Hawaii and head to the Mauna Kea Cacao Farm to see how their award-winning chocolate is produced. As you can imagine, the process of turning Hawaii cacao beans into a chocolate bar is full of flavor and history. 

Cacao beans are bitter, so they need to be fermented in order to improve their flavor. Then they need to be dried before being finely ground with sugar to make a paste. This mixture goes through an intricate heating process known as tempering which ensures the bar has a perfect texture. It’s not too hard or chewy, but also not so soft it melts in your mouth instantly!

While they’re a small, family-run company that works hard to provide sustainable and healthy products; they also strive to create an amazing customer experience where you can witness every step of the cacao-making process. 

The farm organizes Big Island chocolate tours and tastings that cost $80 per person. Children under the age of 10 pay $65 per person. 

Their Chocolate Farm Big Island tour takes you deep inside their farm where you’ll be amazed at the incredible produce they grow, from nearly 1,000 cacao growing trees, more than 40 varieties of exotic fruit, 1,600 pineapple plants, avocado trees, banana trees, coffee, and turmeric. They also grow vanilla orchids and different varieties of Hawaiian sugar cane. 

You’ll also get to immerse yourself in a culinary tasting experience that’s a dream come true for chocolate lovers. 6.  Puna Chocolate Co – Big Island

On their  Kona chocolate tour , you’ll get to walk through ravishing cacao orchards where you’ll learn all about the making chocolate process from planting cacao trees to turning them into chocolate treats.

There are 600 cacao trees, more than 2,000 coffee plants, 400 macadamia nut trees, and other tropical vegetation in their Kona chocolate farm. Tours cost $30 per adult. 

If you’re visiting Hilo, you’ll get to immerse yourself in their cacao orchards and see their “fermentory” and cacao nursery, as well as banana and coffee trees. The Kurtistown orchard in Hilo is home to 1800 cacao trees, a family of goats, and lots of macadamia nuts, bananas, and coffee trees. The cost of the  Hilo Chocolate Factory Tour  is $23 per adult.

Inspired by an article about Waialua Chocolate, Hana Gold founder Francine Frost decided to start growing cacao. At the time, she didn’t think it was possible to grow raw cacao in Hawaii.

Robert and Francine Frost founded the Hana Gold Plantation in 1978, and ever since then, they’ve been providing people with the most exquisite, naturally grown products. In the last few years, the Maui Cacao Farm has started producing the first “branch to bar” chocolate in Maui.

9.  Mauna Loa Visitor’s Center – Big Island

Finally, I felt the need to include the Mauna Loa Macadamia Nut Factory Visitor’s Center on this list. It’s one of the best things to do in Hilo.

While they are a macadamia nut factory, they specialize in many chocolate-covered macadamia nut products like dark chocolate, sea salt caramel, milk chocolate coconut, milk chocolate toffee, and lots of little gift packs of Hawaiian chocolates.

It is a great place to go to get some awesome souvenirs , and where to find some of the best Hawaiian chocolate.

10. Hamakua Chocolate Farm – Big Island

At the Hamakua Chocolate Farm, the tours are for children 12 years and older. Not only will you get to see a chocolate tree, but you will also enjoy one of the most beautiful botanical gardens too!

This guided cocoa farm chocolate tasting starts at 1:00 PM on either Wednesday or Friday and is $79 per person. It is very in-depth and is 2.5 hours long.

You will learn the entire award winning cacao making process from tree to chocolate bar. You will also taste the delicious chocolate samples, including the fresh fruit from a cacao pod.

11. Manoa Chocolate Hawaii – Oahu

Located in Kailua, head to this Chocolate Plantation Oahu and enjoy another great cacao farm tour.

This Oahu chocolate tour is only $25 per person. You will learn the bean to bar chocolate making process with this company.

During this Honolulu Chocolate Factory tour, you will enjoy a taste of cacao nibs and the fresh cacao fruit, and of course, the finished chocolate bars too. They even have chocolate tea too!

These tours are offered daily except Sunday and are offered for kids 12 and older. It is about an hour to an hour and a half.

12. Mahi’ai Made – Big Island

This cacao farm was actually a pineapple farm called Hawaiian Crown, but rebranded and now is a chocolate farm with a cacao farm tour!

You can go on this Chocolate Farm Kona Tour every Wednesday, Friday, and Saturday. It is between 1.5 and 2 hours long.

This is located in the Hilo location, so wear rain gear and walking shoes since it can get wet at times.

After learning about the cacao growing process, you will see the factory and see how they process the cacao into chocolate. Samples will include cacao beans, nibs, and 70% dark and “dark milk” chocolates

Adults are $30, children under 10 are $10, and children under 2 are free. It is another great chocolate tour Big Island has to offer.

13. Original Hawaiian Chocolate Factory – Big Island

Finally, we have the Original Hawaiian Chocolate Factory on the Big Island. With this Cocoa Plantation Hawaii, you can enjoy a Wednesday and Friday tour of the farm.

This chocolate tour Hawaii costs $25 per person, $10 for children 6 to 12 years old, and free for children under 5 years old.

We always make it a point to stop by our favorite chocolate shop, Manoa Chocolate, when we are on Oahu. We first stumbled across the craft chocolate makers back in 2015. Back then, they occupied a tiny shop across the parking lot on the top floor of Kailua Square Shopping Center. We booked their “Tour & Tasting Experience” and were blown away by their entire lineup of chocolates. Even now, they remain our favorite craft chocolate makers, and we have chocolate shipped to our home on the mainland in large batches!

At the time, the owners took an active role in the tour and tasting. You could tell they have a huge passion for chocolate and the entire process. They were extremely knowledgable and we learned so much about the world of cacao. For instance, it was through them that we learned that the fleshy pulp surrounding the cacao seeds can be eaten. Fast forward a few years later, and we finally got to try the fruit at the Lavaloha Tree to Chocolate Tour . We were surprised that the fruit itself tasted nothing like the chocolate we know and love today!

Manoa Chocolate's new facility is much larger and they staff a few more “chocolate sommeliers” than when we first started going. When you walk in, it feels like stepping into a boutique winery. This may have been the intention, since they now offer wine and chocolate pairing experiences in addition to their classic tasting experience.

Supporting the Hawaiian Community

Although we miss some of Manoa Chocolate’s original offerings, we love that they have shifted more focus towards sourcing their cacao beans from Hawaiian growers. Hawaiian grown chocolate bars are not something you come across on most shelves. This is due to the fact that cacao has only gained traction as a commercial crop in the last few decades, even though it has been around on the islands for almost 200 years.

They have also created a “ Support Maui Bar ” in which the net proceeds go towards disaster relief. Purchases can be made on their website, www.manoachocolate.com .

There is a Manoa Chocolate bar to suite any preference. They come in a variety of flavor notes and you can even find chocolates made with alternative milks such as goats milk and coconut milk! Just like with any good wine or whiskey, each of their single origin chocolate bars have a distinct flavor and are aptly named after the region that the beans are sourced from. It’s hard to choose a favorite, but the ones we recommend and ALWAYS keep stocked are the following:

  • Mililani, O’ahu Island Bar 70% (tasting notes: cherry, passion fruit, raspberry)
  • Kealakekua, Hawai’i Island Bar 70% (tasting notes: strawberry, macadamia nut, vanilla)

The cacao nibs are also great on ice cream or acai bowls. A little goes a long way, so we usually get the smaller bag of nibs. On the palate there are flavor notes of roasted coffee beans and dark chocolate upfront which leads into a burst of banana and cherry. They have a delightful crunch with a slight bitterness that enhances the sweet notes in whatever you pair it with. Not only do they taste delicious, but they are also considered a superfood and are packed with antioxidants.

Manoa Chocolate is not only supporting Hawaii's agriculture and reforestation efforts, but they are an important part of the art and cultural community. Many of the chocolate bar covers are illustrated by Shar Tuiasoa of Punky Aloha Studio , a local artist, and they also host frequent live events showcasing local musical talents.

My husband and I booked this tour as we wanted a smaller and intimate compared a large circle Island tour. Jose was an excellent guide and taught us a lot about Hawaiian culture and history of the islands. He really ga ... ve us an authentic experience. My husband loved hearing about how Jose spearfished and hunted and shared his catches with friends and family as is Hawaiian tradition. Jose went out of his way to bring us to extra lookouts outside of what this tour package included and wanted to give us the best experience of Hawaii. We loved seeing the lookouts on the south and in the mountains that gave us a spectacular views of Oahu. It gave us a good taste of everything so we could spend more time in each location like Kualoa Ranch in the future if we wanted to to. He also showed what a caring guide he was as we had a pregnant lady in our tour group, always checking up on her wellbeing and being considerate to check if any stops were needed for her.
