The dish gets its name from the pot it's traditionally baked in, the cassole. This version includes duck confit and the French garlic sausages that are a specialty of Toulouse.

Ratatouille with tapenade recipe
This dish is named from the Occitan language spoken in southern France. From the words ‘ratatolha’, meaning ‘chunky stew’ (in French military slang, ‘rata’ was a mix of beans, potatoes and mixed vegetables with fatty meat), and ‘touiller’, meaning to toss, or stir up, food.

Pissaladière with white anchovy and olive
Traditionally from Nice , this dish is thought to have originated from a 15th century Genoese recipe. Thick pizza dough is topped with caramelised onions, black olives and of course, anchovies – the most celebrated of which are from Collioure, where they have been fished by net and salted by hand since the Middle Ages. This version uses puff pastry, marinated white anchovies and goat’s cheese.

A dark and sticky sweet treat accompanied by perfectly crisp pastry. According to legend, tarte Tatin was invented by mistake in the 1880s, when a hotelier tried to disguise a burnt apple tart.

SBS announce new season of Plat Du Tour to accompany their coverage of the Tour De France
The new season will be available from July 1
French-Australian chef Guillaume Brahimi is back to serve the finest in French cuisine in a new season of Plat Du Tour from Saturday, July 1 on SBS and SBS On Demand.
The show will accompany SBS’s exclusive coverage of Tour De France , as the series sees Guillaume cook 21 different recipes to accompany the 21 stages of the cycling event. Celebrating its fourth season, each episode of Plat du Tour features special guests and food & produce from each region the race tours through.
Guillaume demonstrates to viewers how to make quick and easy recipes so they can experience their own taste of Europe and the Tour from home with recipes showcasing locations throughout Spain and France including the Spain Basque region, Bordeaux, Saint-Gervais, and Paris.
Some of the recipes included in Plat du Tour are a burned basque cheesecake from the Spanish Basque region, the French stew le coq au vin from the historical Rhone wine region, and a crayfish and saffron risotto from Passy, a quaint French town just 30km from the Italian border.
Plat du Tour episodes will be available on SBS Food Online and SBS On Demand and will air as special episodes on SBS Food from July 27 after the 2023 Tour de France has concluded. Plat du Tour is produced by Blink TV for SBS.
Every stage of the Tour de France and Tour de France Femmes avec Zwift will stream live via SBS On Demand, where viewers can also enjoy the new Tour de France hub for a variety of catch-up replays, extended highlights, mini-stage recaps and more video content.
SBS will provide extensive coverage of every stage and moment of the Tour de France and Tour de France Femmes avec Zwift with the men’s race starting 1 July to 23 July and the women’s race from 23 July to 30 July.
